Pasta


Homemade pasta

Almost 2 cups Flour
4 Tlbs Cornstarch
1 tsp Salt
2 Egg
1 Tlbs Olive oil
1 Tlbs warm water

Sauce
1 red pepper
1/2 onion

1 8 oz can artichoke hears
1/2 stick butter
1/2 cup parmesan cheese
1/8 cup white wine
black pepper to taste

As a substitute for cake flour to make the pasta, add 2 Tlbs corn starch to a 1 cup measure and then add 1 cup white flour.  Do this twice and add to the Kitchen aid mixer metal bowl*. Add eggs and salt and blend on low with the mixing tool.  Add the olive oil and water as needed.  Use the dough hook to continue to mix dough for 1-2 minutes.  The dough should not be sticky.  Roll into small balls.  Attach  the Kitchen aid pasta maker attachment**.  Select the type of pasta. In a large pot, bring water to a rolling boil.  Cook pasta 3-5 minutes, and do not cook all the way.  Drain and retain about 1 cup of pasta water.

In a large sauce pan, melt 1/2 stick of butter. Saute onions and red peppers.  Add artichokes and saute another 3 min.  Reduce heat to medium and add pasta, 1 cup pasta water, 1/2 cup white wine, and
 black pepper.  Cook on medium low until liquid is absorbed by the pasta.  Serve immediately.
